This is one of my favorite bread to bake during the holidays. It's fruity, nutty, healthy and ... EZ to make!
Cranberry Nuts Bread
You Need:
- 2 cups flour(1 1/2cup all purpose;1/2 whole wheat)
- 1/4 -- 1/2 cup brown sugar(depends on personal preference)
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1/4 cup oil or butter
- 1 egg
- 1 cup orange juice
- 3/4 cup dry cranberries
- 3/4 cup raisins
- 3/4 cup nuts(walnuts, pecans...)
- a handful oats
- Preheat your oven at 350 F.
- In one bowl mix flour, sugar, baking powder, baking soda and salt.
- In another bowl beat the egg, add oil/butter, orange juice and mix well.
- Pour the liquid mixture into the dry mixture, fold gently with a silicone spatula just until the dry ingredients are mostly moistened (the batter will be lumpy).
- Add in dry cranberries, raisins and nuts into the batter, and fold them in until just combined.
- Grease one 9-in loaf pan or put parchment paper in the loaf pan and dump the batter into the loaf pan.
- Sprinkle the oats on top of the batter.
- Bake @ 350F for 1 hour 10 min, until the bread is golden brown.
- Cool the bread on a wire rack for 15 to 20 minutes and enjoy.
